Michelin chef Brad Carter launches his own One Star Dislandner Bar in Manchester – offers its gourmet offer on the humble kebab.

Brad, ca.Hef, director of Birmingham’s Michelin star Carters of Moseley, launched the highly successful One Star Dislandoriginally as a takeaway project when his restaurant was forced to close through lockdown.

Now it finds a new home in Manchester’s Escape to Freight Island – the 2,000-capacity outdoor venue at Mayfield Depot – from Wednesday.

Brad was inspired to diversify into kebabs after experiencing Berlin’s Gemüse Kebab, one of the best dishes he says he’s ever eaten, and other Berlin street kebab vendors, launching the highly successful One Star Döner Bar in Birmingham during lockdown, while his restaurant was closed.

Now it will bring joy to Manchester’s food scene by joining similar Voodoo Rays pizza, Madre tacos, Choo Choo eclairs, Allpress filter coffee and Camden Town Brewery at the Depot Mayfield food and beverage experience.

The kebabs, all served on Pide flatbread, sourced from a Turkish bakery in Manchester, are said to use the “very best of British ingredients”, including Cornish Lamb, Tamworth Mortadella and Cotswold White Chicken.

And diners will be happy to hear that they do not come with Michelin-style prices – as the kebabs cost £ 10 per person. Walk.

You can also pick a page with Brad’s signature “potato smiley” faces – a nod to Brad’s love of a rave, as well as what he says is the king of fried potatoes anyway.

Two shawarmas, Mortadöner, are offered using mortadella, shredded cabbage, cavolo nero and Margarita Hot Sauce; and Bonedöner with chicken, kebab van salad, pickled chili and fried garlic mayo.

Chef Brad opened his Carters of Moseley restaurant for the first time in 2010 with partner Holly Jackson. Completely self-taught, he quickly won rave reviews for his innovative kitchen.

They won the Good Food Guide Readers’ Restaurant of the Year in 2013 and were then awarded a coveted Michelin star in September 2015.

The restaurant was then named in the Sunday Times Top 100, National Restaurant Awards Top 100 and won the OpenTable Diners’ Choice ‘Fit for Foodies’ Award in 2019 and also has 3 AA rosettes.


A star Dislandner Bar will be open to the public Wednesday through Sunday on Escape to Freight Island.

And as well as the growing supply of food and beverages, the venue also hosts comedy nights, resident DJs and live performances.
